Pillowy Lemon Poppyseed Cookies

Yep, I am on a lemon-roll! This installment of Ahu’s Lemon Addiction brings you these beauts – Lemon Poppyseed Cookies that are more like pillows than cookies – they are so light and fluffy! Easy to make and even easier to eat – get this cookie into your baking rotation!  By the way, you can get a large quantity of poppy seeds for fairly cheap and they can be used for everything from these cookies, to cakes to even bagels. *checks teeth*

I love both lemon and poppyseed, so I thought why not combine them – lemon for it’s brightness and poppyseeds for their crunch! Just don’t forget to check your teeth after eating them.

In preparing this post, I noticed a lot of bloggers stack their cookies and I always thought it looked really neat – so I decided to try it!

Pillowy Lemon Poppyseed Cookies

Pillow, chewy cookies with a lemony kick and studded with poppyseeds!
Ingredients
  • 1.5 cups flour
  • ½ cup sugar
  • ½ cup unsalted butter, softened
  • 1 egg
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ½ tablespoon of poppyseeds
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking powder
Instructions
  1. Mix the butter and sugar until it's a bit airy (use the whisk attachment if using a stand mixer).
  2. Add in the vanilla extract (see my earlier post for homemade vanilla extract!), lemon juice, lemon zest and egg to the mixer and continue mixing until combined.
  3. Carefully add in the remaining ingredients (flour, baking powder and poppyseeds).
  4. Let the dough chill while you preheat your oven to 325 F
  5. Once your dough has chilled and your oven is hot, scoop your cookies (use a scooper if you have one) onto a baking sheet. I like my scoops at about 1.5 tablespoons.
  6. Bake for 14-18 minutes, until you see the edges turning golden brown.
  7. Remove from the oven and cool on a rack.
  8. Enjoy!

    Few things:

    Poppy seeds always make me think of the Seinfeld episode about the poppy seed muffins.

    Also, I don’t have an oven can I still make this? Please reply immediately. Hahhahahha.

    Dear Ahu, I love lemon and poppyseeds too – this is such a fantastic flavor combination and I have baked many a cake with those two components. But never such wonderful cookies – these treats look elegant, delicious and very pretty indeed! What a great recipe!

    I was hunting for a lemon/poppy seed recipe, because I read a charming book of stories called The Poppy Seed Cakes to my daughter. I remember reading the book regularly as a child…always checking it out from the library…and now, it has been reprinted. Anyway, we wanted to make something to go with the book we enjoyed. Thanks for this recipe! As a lemon lover, I can’t wait to try it!

    My husband fell in love with their delicate flavor and unusual texture, and asked me to “add them into the rotation.”
    I made them just as you wrote, but needed more baking time (about 20 min.)
