Mix the butter and sugar until it's a bit airy (use the whisk attachment if using a stand mixer).
Add in the vanilla extract (see my earlier post for homemade vanilla extract!), lemon juice, lemon zest and egg to the mixer and continue mixing until combined.
Carefully add in the remaining ingredients (flour, baking powder and poppyseeds).
Let the dough chill while you preheat your oven to 325 F
Once your dough has chilled and your oven is hot, scoop your cookies (use a scooper if you have one) onto a baking sheet. I like my scoops at about 1.5 tablespoons.
Bake for 14-18 minutes, until you see the edges turning golden brown.
Remove from the oven and cool on a rack.
