Lemony kale hummus - tangy, green and delicious with the added benefits of kale! Ready in less than 10 minutes.
Ingredients
1 can (15 oz) chickpeas, drained (also known as garbanzo beans)
1 cup kale - washed and chopped in strips
3 lemons
1½ tablespoons tahini
½ teaspoon garlic powder
Salt & Pepper to taste (you can start with ½ tablespoon salt, and ½ teaspoon pepper)
Instructions
Before measuring the tahini, give it a good mix - it tends to separate out.
Pulse the tahini and the juice of lemons in a food processor for 5 seconds.
Drain the water from the chickpeas and add them to the food processor.
Add the garlic powder, salt and pepper and pulse for 20-30 seconds until there are no whole chickpeas.
Add the kale to the food processor and pulse until it reaches the desired consistency. (I like mine ever so slightly chunky, where you can see bits of what's inside).
Taste and adjust seasonings if needed.
