- 2 pints of the most beautiful grape, cherry or plum tomatoes you can find
- 2 tablespoons olive oil
- 2 cloves of garlic
- Salt and Pepper to taste
- Add the olive oil to a nonstick pan and let it heat on medium heat while you slice up the garlic.
- Throw the garlic into the oil and let it infuse for about 2-3 minutes.
- Add your tomatoes in whole and stir gently for about 10-15 minutes until most or all of them have bursted and the consistency is like a compote.
- Salt and pepper to taste.
- Serve and enjoy!
