Baked Apples Streusel

Apples baked with a lovely streusel topping of oats, almonds, cinnamon and maple syrup. Bring the scent of Fall into your kitchen with this easy vegetarian breakfast dish!
Ingredients
  • 2 medium - large apples (firmer varieties work better)
  • 1 teaspoon cinnamon, divided
  • 1 tablespoon butter, divided (optional, omit if you want a vegan recipe!)
  • 4 tablespoons rolled oats
  • 1 teaspoon sugar (brown or turbinado works great)
  • 1 tablespoon chopped nuts (like slivered almonds)
  • 1 tablespoon coconut flakes (optional)
  • 1 tablespoon maple syrup or honey
Instructions
  1. Preheat the oven to 350 F.
  2. Core the apples by cutting the core out from the top but do not cut all the way (leave about ½-3/4 at the base of the apple)
  3. In a small bowl, combine ½ teaspoon cinnamon and 1 teaspoon sugar.
  4. Place the apples in a baking dish and sprinkle the cinnamon sugar mix into the inside, along with a very tiny pat of butter in each (About ¼ teaspoon). Omit the butter for a vegan recipe.
  5. Bake for 20 minutes.
  6. While the apples are baking, prepare the streusel topping by combining the oats, nuts, maple syrup/honey ½ teaspoon cinnamon, and ½ teaspoon of butter (or double the maple syrup). Microwave for 30 seconds and stir until combined.
  7. Once the apples have baked for 20 minutes, open the oven and spoon the streusel mixture into the center of each apple.
  8. Bake for an additional 15-20 minutes until the apples are soft and the topping is crunchy.
  9. Remove from the oven and enjoy - serve with a scoop of vanilla ice cream if desired!
